  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 4 large eggs

  • 1 cup buttermilk
  • 1 cup sweetened shredded coconut

  1. Preheat oven to 350°. Grease two 8×4-in. loaf pans.
  2. In a large bowl, beat sugar, oil, eggs and extract until well blended. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture alternately with buttermilk, mixing well after each addition. Stir in coconut and walnuts.
  3. Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely.
